The theory says that in Far From Home, Spider-Man meets Nick Fury for the first time. This is the first time Peter Parker is making a lot of contact with Nick Fury played by Samuel L. Jackson. They are both having fun and making jokes of Star Wars.

Samuel L. Jackson played Mace Windu in all three Star Wars prequels between 1999 and 2005. And since Peter Parker is a high school student in 2016, it means he was a little kid when these prequels came out. So how could he not know that Nick Fury looks exactly like Mace Windu especially after he is claiming to be a huge Star Wars fan?
